1 pound green beans, stemmed
3 gloves garlic, smashed
3 sprigs fresh thyme, halved
4 tablespoons extra virgin olive
Salt and pepper to taste
3 anchovy fillets, soaked in milk for 20 minutes, then mashed
2-3 teaspoons fresh lemon juice
Finely grated zest of one lemon
Preheat oven to 450 degrees.
In a large baking dish, toss together the beans with the garlic, thyme and olive oil and season with salt and pepper. Spread the beans and seasonings in a single layer and roast about 15 minutes, tossing occasionally, until tender and browned. Discard the thyme sprigs.
Transfer the beans to a bowl. Add the anchovies, lemon juice and lemon zest and toss well to coat.
