Black Bean, Yellow Pepper, and Cumin Chili

We’re having vegetarian friends over for dinner Friday night.

6 tbsp olive oil
2 large onions, chopped
1 large yellow bell pepper, seeded and chopped
1 1/2 tbps cumin seeds
1 1/2 tbsp minced canned chipotle in adobo
45 oz canned black beans
30 oz canned diced tomatoes
2 tbsp roasted garlic
2 c. vegetable broth

Saute onion, pepper, and cumin in oil until onions are golden. Stir in chipotles and heat through. Add remaining ingredients and bring to a boil. Simmer until liquid reduced by half. Partially blend, season with salt and pepper.
